Biryani is a rice based recipe that carries meat or vegetables as the main ingredient. Lots of herbs and spices go into cooking Biryani and the meat and vegetables are layered and cooked. Biryani in Persian means cooking and roasting and the word Biryani springs from the same.
Biryani stemmed from Persia and the legend has it that the tribals and nomads carried plenty of rice and meat on their extended journeys and they developed the culture of layering rice and meat and cooking together after smattering ample nuts and dry herbs. The traditional approach consisted of simmering and cooking the combination under fire and then burying it under sand for hours together before the dish was deemed ready. The traditional form of Biryani has since then been improvised and modernized according to convenience
Nowadays there are lots of types of Biryani prepared using a lot of diverse cooking styles. There are probably more than a hundred varieties of Biryani prepared using various combinations of meat and vegetables.
Biryani has Rice and Meat as its fundamental ingredients. The rest of the ingredients, differ depending on the variety and style of the Biryani being cooked.
Hyderabad in India is widely regarded as the Biryani capital of the world. There are mind boggling varieties of Biryanis prepared here at various restaurants. Few of those recipes are intimately guarded by families and restaurants, as they have been handed down through numerous generations. The Mughals brought Biryani with them when they invaded India. It is one of the many influences that came to India with the Mughals and became particularly popular here and with time have further evolved. It also took on some local flavors to suit the spice loving Indians.
A great Biryani consists of perfectly cooked meat and the right mix of herbs and spices, baked along with rice. The Rice and Meat is never combined whilst cooking. They’re both cooked separately. The final stage of the preparation consists of layering the two alternatively and usually cooked either in an oven or on conventional wood fire, utilizing low heat.
